Rollover is a process of extending the settlement date of an asset. It can occur on a daily basis, when a trader exits a trade before the end of the working day to avoid delivery and then re-enters it the next day, postponing the settlement. Or in case of futures contracts, traders switch from the front month contract about to expire to another contract with a further-out date.
